Opening a small restaurant & Coffee shop

I don't know what your time is like but my wife and I have thought of getting a job as a barista. Even if only part time and short term you'll learn what it's like to be in the trenches. Let them train you. I've cooked most of my life and I've always told people if you want to learn to cook get a job as a cook.

i would strongly suggest not getting that job anywhere near your competition.
