My vision for the coffee shop that I am working on would ideally only sell single serving pour over coffee and espresso drinks. This is just asking to lose money with the AM rush, where you have people that just want coffee, and they want it FAST. I do not want to compromise on the quality of each cup to the point of buying a Bunn or FetCo commercial brewer.

What other options are there to deliver a higher quality cup in the fat paced atmosphere of an AM rush. Something like the Bodum Bistro Pour Over Coffee maker seems like a step in the right direction, but it is not intended for commercial use.
Any input on what you guys/gals do to cope with the AM rush would be greatly appreciated.

- Large pour over stations (10 cups at a time)
