What the heck is it? Sorry for asking what seems to be a pretty basic and searchable question! I put it in the search box but nothing came up. I've been looking at used roasters and some of them come with a catalytic oxidizer.

The coffee shop that I'm working for now has a diedrich but it doesn't have that gnarly thing sticking out of it like all the roasters with catalytic oxidizers.

Try searching for "coffee roaster thermal oxidizer." I found a bunch of information. I think catalytic and thermal are used interchangeably.
 
I believe it basically works to cut down on the smoke. A catalytic convertor for a car burns the un-burned fuel from car exhaust.

exactly. Just need that installed if you are roasting in the city that requires strict guide line for the roasters.
 
Catalytic oxidizer is for the protection of environment. This is a thermal afterburner for minimizing smoke especially on the roaster chamber. The process is taking place at the combustion chamber. The fuel consumption is lowered by 50 to 95% by reducing carbon emissions because catalytic oxidation occurs in lower temperature as such a layer of catalyst is used near the combustion chamber that helps oxidize the VOCs and HAPs in an exothermic reaction.
