Drive through operators: To Plumb or use Tanks?

I'm currently scouting locations for a drive through and I am wondering if I should go for built-in plumbed and somewhat permanent, or get tanks and have someone come by and empty/fill them for me a couple of times a week.

So, I thought I'd ask if anyone has experience with tanks in a drive through and has some insight to the following:

• 
  Water service to fill tanks?
  
  Service to empty gray/black water?
  
  Toilet with tanks?

Any input is greatly appreciated.
