iced coffee

How are iced coffees typically made? I see some places have a mixture of cold espresso and water pre mixed, while others make a fresh shot of espresso and then pour over ice. Which method is better? Please help me as I am a novice. Does this work the same with blended coffees?

Iced Coffee

For espresso based iced bevs.: the way that I was trained is to always brew a fresh shot of espresso for each drink. As for regular coffee: depends on where I was working at the time. I always found that using fresh coffee (or at least brewed that day) was far superior in taste.

I have found that brewing a fresh shot is better, as well as mixing everything in a Martini shaker and shaking it, you get a bit of froth, but it really mixes the flavors well.
 
use toddy or filtron. they brew cold and are not bitter and are better than espresso over ice. we use the 10 gallon filtron from espressoparts.com
