Innovative coffee ideas?

Hey there!

I'm a barista in the uk tasked with providing a 'coffee of the month' for each month. I would really appreciate any ideas for exciting and innovative coffee's. The coffees are meant to be rather special and impessive and provide something different to the average persons coffee experience.

Is the "coffee of the month" a creative coffee drink, or are are looking to highlight a specific blend or single origin coffee each month?

Where do you get your roasted coffee? Is it possible that the person who roasts coffee for you would be able to help you find new coffees to offer?
