1) Heat exchange and how it works
a. Conductive
b. Convective
c. Ambient

2) How heat travels through different mediums, especially focused on conductive heat through different types of metals and convective heat through different convective systems in the roasting world.

3) How different systems are set up to support the overall alignment of the metal, fan, drum speed, batch size, etc... to work out the tug of war that each individual component brings to the table.
