I have a Saeco Rio Vapore machine which I have had since December. It makes fairly good espresso but I have noticed recently that the water does not seem to be getting hot enough. Any suggestions?

It is probably your thermostat. It could be the heat conducting gel on the bottom of the thermostat also. How old is it?
