Water used in coffee shops?

I'm the new kid on the block in your excellent group! Curious, since I've been consuming coffee since the 50's. I've noticed since I have lived many places since then that the water makes a difference in the taste of coffee. Do the shops use filtered, bottled or just plain tap water??? :?:
