Have you ever heard about Wine process,in my country.some coffee made with "wine process" what process is it.any comment?

Alex... processed coffees are similar to honey and other natural processing. A local roaster just released a fairly expensive ($27USD/12oz) wine processed coffee... the only info I can find is

"The Wine Process this coffee has gone through starts at the harvest. The coffee is left on the shrub two weeks after maturity, leaving the fruit to over-ripen on the branch. Once the coffee fruit is harvested, it is sun dried over several days in a cool climate at over 5500 feet above sea level. This process creates a uniquely strong wine-like cup profile."

I know a lot of people are really playing around with processing/fermentation... I'll see if I can find more info.

I thought the only country that had the climate to do this was Brazil..............and only very specific areas of Brazil
