Brooklyn/NYC coffee shops

hello are there any NYC particularly brooklyn coffee shops out there that are willing to sit down and talk to a newbie tying to open a coffee shop of his own? i would like to see how things are working and such. i am opening this coffee shop in a jewish neighborhood so there is going to be certain variations between my coffee shop than all other non jewish/kosher coffee shops, therefore i am looking for all the hands on help i can get in order to see where i stand. thanks efk
