What's the performance difference between a disk Burr Grinder (less than $50) and a conical style ($80-$200)? I'm thinking about the Capresso 559 type vs. Infinity in particular.

Honestly I wouldn't bother with the cheap flat burr grinders as the burrs they utilize have no useful design and spin WAY too fast. You end up with alot of noise and static.
By far the best choice between those 2 would be the Infinity as it has a proper set of conical burrs. There are others in the mix that offer good grind performance for the $. In the $200 or less crowd Baratza has several good mills and are said to be releasing a new espresso-capable lower cost grinder called the Encore soon... the Breville Smart grinder seems fairly good... and this Krups Krups GX610050 Professional Die Cast Conical Burr Grinder, Black: Amazon.com: Kitchen & Dining has been getting good feedback. Pretty much just a rebadged Sunbeam.

Agreeing with shadow754 - just wanted to add that disc burrs are much cheaper to manufacture than conical burrs, which contributes to the huge price difference in the acutal grinder.
The faster spinning of a disc burr is bad because it can cause frictional heat build-up, which can damage the coffee bean. The conical burr will rotate more slowly, with less heat build up. Additionally, burr grinders are less likely to clog - more important if you prefer oily beans.
