i was just wondering in your italian sodas do you use soda water, or do you use the soda siphon thing.

We use San Peligrino or Perrier soda water, along with Monin Syrup. Cream sodas also get Half-n-half...
They have become very popular with are non-coffee drinking customers.

I was just about to post the same question. I was also wondering, do you just use the soda water out of a bottle or do you have it on tap?

We initially had a soda siphon but it holds hardly enough for two drinks without refilling and recharging. We still use it, but keep liters of soda water in the fridge for back up. Liter size bottles has worked better for us so that there isn't so much to go flat in a larger size.

Try SodaClubUSA. Works well, a lot less work than the siphon and cheaper than buying bottled soda water.
