What is Coffee Luwak or Kopi Luwak?

Civet Coffee or Coffee Luwak or Kopi Luwak, also known as Coffee Alamid in Philippines or Weasel Coffee, is indeed the rarest and most exotic coffee in the world. This coffee is also featured in the movie "The Bucket List" staring Jack Nicholson and Morgan Freeman.

To understand how the naming was derived, we will go to explain you: Kopi is the Indonesian word for coffee, and Luwak is a local name (in the island of Java) of the Asian Palm Civet. The red and ripe coffee fruits are part of its normal diet, along with insects, small reptiles, eggs, and other fruits. The inner bean of the berry is not digested, but it has been proposed that enzymes in the stomach of the civet add to the coffee's flavor by breaking down the proteins that give coffee its better taste. The beans are defecated, still covered in some inner layers of the berry. The beans are washed, sun dried, and given only a light roast so as to not destroy the complex flavors that develop through the process.

There are a few of schools of thought on this - some folks believe that at any given point during a harvest, some coffee berries are not quite ripe or overripe, while others are just right. The palm civet has the ability to pick the best and sweetest berry and evolved as an omnivore that naturally eats fruit and passes undigested material as a natural link to disperse seeds in a forest ecosystem. So, wild Coffee Luwak allows the civet to eat only the cherries that they select. On the other hand, they will eat what is available, which makes the case for feeding them in captivity. Wild civets will eat robusta and other less desirable strains when they find it since they are more prolific at lower altitudes.
