What size ice machine?

Hi everybody,

I have a question for those of you already operating your own shops: what size ice machine do you use or recommend? (in case yours is too small or too large) I am in a hot part of the country so I will need a lot of ice, especially in the summers; however, I'd hate to go overboard and never see the bottom of the bin. Any advice is appreciated as I am trying now to finalize equipment selections!

It might sound like a simplistic reply but assess your ice usage based on your target profit/volume level and then get a unit that does at least 25% more volume than this. At my outlets, we've consistently added more equipment as the volumes have grown and this is not only more expensive than buying the right kit at the outset but can also be real problem if you're tight on space as we are. You'll never regret buying a higher output unit but you might regret buying a smaller one!
